This easy low-carb recipe just might be a new favorite. These golden-brown fritters that are crispy on the outside and juicy on the inside.

Turkey Fritters

Ingredients

1 lb Plainville Farms Ground Turkey

3 baby potatoes + 1 small zucchini (about 1-1/2 cups total), shredded on a box grater then pressed to remove excess water

1 egg

2/3 cup bread crumbs

1/4 cup goat milk feta, crumbled

1 large garlic clove, minced

1/2 teaspoon smoked paprika

Sea salt and pepper

Olive oil for frying

Instructions

1. In a large bowl, combine all ingredients and mix well.

2. Heat oil in a non-stick pan on medium heat.

3. Form mixture into patties and cook for 3-4 minutes on each side until browned and the turkey is cooked through to an internal temperature of 165º. Serve immediately.
